Book: Roots: The Definitive Compendium with More Than 225 Recipes by Diane Morgan

For our November Cookbook Book Club, we’re going underground.

Roots is Diane Morgan’s deep dive into the world of root vegetables, from the familiar carrots, beets, potatoes, and sweet potatoes to less familiar roots like celery root, salsify, cassava, galangal, and more. Organized by ingredient, the book explores how to choose, store, and cook with 29 different roots through more than 225 recipes.

Published in 2012, Roots went on to win the 2013 James Beard Foundation Award for Vegetable Focused and Vegetarian cooking as well as the IACP Award for Single Subject.

It feels like the right book for November, when the season naturally shifts toward deeper flavors, slower cooking, and the kind of ingredients that ask us to pay a little more attention.

As always, choose a recipe from the book, make it at home, source at least one ingredient from a local farm, farmers market, or producer, and bring your finished dish to the Bakehouse ready to share.
